There is just too much. Doyle planted 4 hills of zucchini and three of yellow squash and I knew it was too much - AND IT IS! The neighbors will be hiding from us soon - we have crossed the street to others to get rid of it. In an effort to find new ways to fix it I went looking for recipes and found this great one by Nigella Lawson. If you don't know of her, she is a British woman who writes about cooking and food in a way that makes me want to roll around naked in it. This one is called Happiness Soup because of it's sunny yellow color. It uses about a pound of yellow squash, diced small. Saute lightly in olive oil with the zest of a lemon (I didn't have a lemon - I used orange zest and it was fine). Add four cups chicken stock, 1 tsp turmeric, 1/4 cup basmati rice (I had arborio - it was fine too, but I would NOT add wild rice or brown rice - the flavors are delicate and it would overpower them) Let this simmer til the rice is just cooked (15-20 minutes). Add the juice of the lemon and let it cool a bit to serve at almost room tempurature. It is technically a soup but gets really thick and is still lovely as a leftover the next day. Serves 4.
I went to Tuesday morning on Wednesday and came out with a load of cookbooks- Nigella's included - so there may be more later.
