Still managing the Vegan diet changes. Losing weight too - about 13 lbs at this point. Joint pain is still soooo much better. Can I say though - It is VERY irritating to try and get a decent meal out. Salad does not a whole meal make for me. Friends went to The Yellow Porch last night without me cause a salad was the only thing I could eat there. I stayed home and made this-------Vegan Asparagus Risotto. Here's the recipe - sort of - no amounts are given, which assumes a bit of cooking experience. If forced I can guess, so write me if you absolutely need them.
Arborio Rice - I added some brown rice, but take my advice and cook it some in advance - it takes much longer to cook than the Arborio.
Asparagus (Fresh, cut up)
mushrooms (sliced - any kind - I had Shitake)
onions (chopped very small)
Saute onions and mushrooms with olive oil, salt & pepper, chopped garlic, in a large skillet until golden. Add rice and any herbs you want, stir. ( I left the herbs out and it was fine, I was too tired to go out to the garden to pick any, which is pretty sad cause some of them are literally only a few steps outside the door. I have really been pushing myself all week though and yesterday I was just tired) Add a bit of wine - white, but red is ok too. Add asparagus. Begin adding veggie broth a cup at a time, and stirring often until rice is cooked. About half way through add chopped almonds (walnuts, pecans, hazelnuts, whatever) and when rice is done, Top with fresh parsley or basil and veggie parmesan cheese substitute.
