I made an interesting version of Tofu last night. It was quick and easy and suprisingly tasty. Slice extra firm (or just firm) tofu into 1/2 inch slices, pat dry with a paper towel, spray a pan or cookie sheet with no stick spray stuff and put tofu on it and under broiler. When toasty tan color, flip it and do the other side. In a food processor, put 1/2 c. toasted walnuts, 3TBS miso - the original recipe called for barley miso - I had rice/soy and it was fine too. 3-4 TBS water, and 1-2 tsp brown rice syrup (tastes like honey, yummm) and process to a chunky paste - kind of like pesto. Spread this on the toasted tofu and put back under the broiler for a minute or two til it begins to brown a bit....that's all. I think I am having this again this week, really nice it was....then there was the tempeh stroganoff with mushrooms & onions, a veggie broth gravy over brown rice...more yumms. I am still having fun learning new ways to cook and despite a bit of cheating on my diet yesterday (a new yarn rep brought pastry in)this vegan thing is feeling so much better. This morning when Kashi the flakey cat, who managed to stay in last night, was YOWLING to get out, I could actually get out of bed and walk down the hall without having to grab doors and furniture to keep from falling, and get to the door.
