Soy is overwhelming my diet and so I am making a concentrated effort to cut back on those convenient frozen fake meats and tofu. This means my usual morning tofu scramble or spinach "omlette" breakfast will not be a an every morning thing anymore. This morning was delicious - peppers, onion, mushrooms, a tiny blue potato, a bit of corn, a couple of spoons full of left over pinto beans all added up to filling and yummy. I added some cumin, ancho chili pepper, garlic and oregano and whole grain toast & orange juice and was happy happy. Tonight - eggplant and chick pea curry......I love all the spices I get to use. I just got my copy of I.C. Moskowitz's Veganomicon last week....oh boy. I really loved the cauliflower & mushroom pot pie in there.
Okay the last thing. Doyle stepped out of the car this morning and got pooped on by a bird. He thought two things - this probably isn't a good omen for the day and I sure am glad cows don't fly.
I cleaned out my cookbook stash last week - all the meat centered ones went away to make room for the whole shelf of vegan ones I now have. It is all down to 2 shelves now. Now if I could just do that with the other books that have begun overflowing. But hey NOT THE YARN though, not even considering that.
